In the 16th century, mastic was better known as icing, and it was then that it began to be used to create elaborate and ornamental designs. At that time it was just as flexible and elastic, but it crumbled when dry and could not be stored for long.
In finished form mastic can be kept tightly closed in a refrigerator for about 2 months. If you put right after making or working mastic in the freezer, then preserve the product for almost six months.
Mastic in its modern form has a long shelf life and the flexibility to recreate a wide variety of delicacies and shapes to decorate desserts.
